The Himachal Food Trail — 15 Dishes You Must Try
# The Himachal Food Trail
Himachal's cuisine reflects its geography — hearty, warming, and made from what the mountains provide. Each valley has its own specialties.
The Classics
1. Siddu
Himachal's signature dish — steamed wheat bread stuffed with poppy seeds and walnut, served with ghee and dal. Every family has their own recipe, and grandmothers insist theirs is the only authentic version.
2. Dham
The traditional festive feast of Himachal, served on special occasions. A full dham includes rajma (kidney beans), rice, sweet rice, boor ki kadi, and khatta (sweet sour dal) — all cooked by specialist Botis (traditional chefs) in large brass vessels.
3. Chana Madra
Chickpeas slow-cooked in a yogurt gravy with Himachali spices — warm, creamy, and utterly comforting. The Shimla version uses a special mix of dried ginger, cinnamon, and cardamom.
4. Babru
Deep-fried bread stuffed with a spiced black gram paste — Himachal's answer to stuffed kachori. Served with tamarind chutney, it's the perfect cold-weather snack.
5. Aktori
A buckwheat pancake made in the Spiti Valley — thin, crispy, and served with local honey or butter. It's the traditional breakfast of Spitian farmers.

Street Food
6. Shimla's Street Momos
The momo stalls on the Mall Road and Lower Bazaar have been serving steaming bamboo baskets of momos for decades. Shimla momos are distinct — thinner wrapper, more spiced filling.
7. Tibetan Bread (Tingmo)
Soft, fluffy steamed bread from McLeodganj — tear it apart and dip in spicy dal or with Tibetan butter tea.
Drinks
8. Chulli
Traditional Himachali liquor distilled from rice or barley — strong, warming, and shared during community celebrations.
9. Apple Cider
Himachal's apple country produces excellent natural cider — try it in Shimla, Narkanda, or the Tirthan Valley.
10. Noon Chai
Salt tea from the Lahaul-Spiti borderlands — similar to Kashmiri noon chai, made with butter and salt instead of sugar.
